A taste of part III, The Fridge and Freezer
Freeze this, never that.
Half of what goes in the bin at our place used to be food I could have frozen. The other half was food I froze that should never have gone in.
Freeze it
- Bread. Slice it first and toast straight from frozen.
- Grated cheese. Into the bag flat, and it goes straight into cooking.
- Milk. Thaw it in the fridge and give it a good shake.
- Overripe bananas. Peel them first, then they're for baking.
- Butter. A block on special keeps for months.
Never freeze
- Lettuce and cucumber. All water. They thaw to slime.
- Eggs in the shell. They swell and crack.
- Mayonnaise. It splits and never comes back.
- Anything crumbed you want crunchy. It thaws soggy.
A taste of one chapter out of 57. The whole book works the same way: the answer first, then the how.
